It is named fusion chutney since I have used few fruits which are not grown in India like cranberries and blueberries and prunes. It can be cooked pulpy or in a semi liquid form. Could be served after meal as sweet dish or could be eaten with any bread.
- Chopped Apple – 1 medium size
- Chopped Dates – 5
- Chopped Prunes- 4
- Dry Cranberry – 1 tblspn
- Dry Blueberry – 1 tblspn
- Raisins – 1 tblspn
- Sugar – ½ cup
- Lime leaf 1 (optional)
- Salt – ¼ tspn
- Lemon Juice 1 tspn
- Water – ½ cup (could be increased as per required consistency)
In a stainless steel pan pour water and cook the apple in it for 3-4 mins.
When apple are soft add all other fruits. Add salt and cook for 3 mins. Is slow fire.
Add sugar. Cook till sugar melts and the fruits are soft and no moisture is left in it.
Remove from stove. Add the lime leaf & lemon juice. Give a nice stir.
Cool and refrigerate for at least 15 mts. before serving.
