Fusion Fruit Chutney

It is named fusion chutney since I have used few fruits which are not grown in India like cranberries and blueberries and prunes. It can be cooked pulpy or in a semi liquid form. Could be served after meal as sweet dish or could be eaten with any bread.

Ingredients:

  1. Chopped Apple – 1 medium size
  2. Chopped Dates – 5
  3. Chopped Prunes- 4
  4. Dry Cranberry – 1 tblspn
  5. Dry Blueberry – 1 tblspn
  6. Raisins – 1 tblspn
  7. Sugar – ½ cup
  8. Lime leaf 1 (optional)
  9. Salt – ¼ tspn
  10. Lemon Juice 1 tspn
  11. Water – ½ cup (could be increased as per required consistency)

Method:

In a stainless steel pan pour water and cook the apple in it for 3-4 mins.

When apple are soft add all other fruits. Add salt and cook for 3 mins. Is slow fire.

Add sugar. Cook till sugar melts and the fruits are soft and no moisture is left in it.

 Remove from stove. Add the lime leaf & lemon juice. Give a nice stir.

Cool and refrigerate for at least 15 mts. before serving.
