This Grilled Mutton Champ is a very popular dish of Northern India specially Punjab. This lockdwon and No outside food delivery has tought us many things. We never tried such dishes at home thought of the complicated procedure and no charcoal griller at home. But I thought of an alternative and grilled it in oven then flamboyant it with Rum to get the charcoal flavour. It came out super delicious so sharing the recipe here. Since its flamboyant with Rum, Its referred as Sharabi Champ Too .
Ingredients: 1st marination
Raw papaya(with skin) paste- 1 tblspn
Salt to taste.
Marinade the mutton with these 2 for at least 4 hrs for galawat or tendering.
2 1/2 cup Thick Curd
1 lemon juice, 1 tblspn coriander powder,
1 tspn toasted cumin powder,
1 tblspn ginger powder,
1 tblspn chili flakes(kuti lal mirch),
1 tblspn Kashmiri red chili powder,
Shahi Garam Masala Powder masala powder 1 tablspn).
Mix all masalas with curd and 2 tblspn mustard oil and marinade the mutton in this for at least 4 hrs.
For Tawa grill- Take one heave Iron tawa. Heat oil and arrange the champs and grill in high heat till the mutton cooks in its own juice. Mutton will get tender slowly.
For Over grill: Arrange it in Grill tay and put it in pre heated oven(200 degrees) and grill in 180 degrees for 20 mins. Flip it and put again for 10 min or till it is tender.
Last step: Whether tawa grill or oven grill, this step is essential.
Oil the Iron tawa/ Iron griddle. Arrange lots of Onion slices. Over these onion. Arrange the Pre grilled Mutton Champs. Now put it in high heat. Pour Rum around the Tawa and it will catch fire and flamboyant the meat. Its done.
Serve with Green chutney, Curd chutney and salad Enjoy.
