Chicken Tikka is a dish which originated in undivided Punjab of the Indian subcontinent now it is popular Indian dish across the world. Tikka refers to a bite sized piece of boneless meat baked in oven or tandoor using skewer after marinating in spices and curd. The pieces are brushed with ghee or butter at intervals to increase its flavor. Its typically eaten with coriander chutney and is served with onion rings and lemon. It is served as an appetizer.
This dish is also popular in Afghanistan however Afghani version is less spicy compared to Indian variant. They marinate the chicken with hung curd, crushed black pepper corn, fresh cream and dry fruit paste. These are not spicy but rich in flavor. This recipe calls for a marination at least for an hr. More you marinate the succulent the meat and flavourful. You may take breast pieces with little fat on it is good but I prefer fatless.
Today I am sharing the Afghani version of Chicken Tikka. I have used olive oil instead to Ghee (preferred by my family) and have cooked in Airfryer.
- Chicken breast pieces- 4
- Hung curd- ¼ th cup
- Fresh cream- 2 tblspn(optional)
- Cashew or magaz paste- 2 tblspn
- Crushed black pepper- 1 tblspn
- Shahi Garam masala powder– ½ tspn
- Garlic paste- 1 tblspn
- Ginger paste- 1 tspn
- Chopped coriander leaves- 2 tblspn
- Black/pink salt- 1 tblspn(to taste)
- Olive oil/Ghee/Butter- 2 tblspn
Instructions: 1st marination
Dice the chicken pieces 1.5” at least. Pat dry and coat it with salt pepper, garam masala, ginger garlic paste and 1 tblspn oil for at least ½ hr.
In a bowl mix in the curd, cream, little slat and chopped coriander .
Now coat each chicken pieces with this nicely. Cover and marinate for at least for an hr. Its better if can do it for long and change sides after intervals.
Pre heat the Air fryer in 200 derees for 7-10 mins.
In the mean time oil the skewer and thread the chicken pieces in the skewer keeping reasonable gap between each pieces.
Arrange the skewers in the Air fryer and reduce the heat to 100 degrees. Bake it for 5 min. I had taken out the skewers half doing it. Likewise all the skewers were half done. Just before dinner I brushed little oil and quote it with the dry fruit paste. Put it in the fryer for final baking for another 5 mins. It was done.
If you do not have Air fryer it could be cooked in oven and on a grill pan too on your Gas stove. The steps will be same however, in oven it will take more time. The the grill pan it should be cooked on high till you get the grill mark on it, then reduce the flame and cook it till its tender.
Serve hot with Hari Chutney, Onion rings, slice of lemon.
These tikkas could e rolled into a flat bread or pita bread with green chutney, onion rings like shwarma.
