Fishi Friday as said by my friend. Does not require speech so Straight to the recipe.
Ingredients:
- Medium size prawns, Jumbow or Tiger prawns– 10
- Garlic & onion powder- 1 tblspn (Substitute it with garlic and onion liquid extracts)
- Chipotle sauce- 2 tblspn
- Olive oil- 2 tspn (divided)
- Butter- 1 tblspn
- Lemon juice- 1 tblspn
- Salt o taste.
Cooking method:
Clean the prawns, remove the shell leaving the tails on. De vein and rinse these in water thoroughly.
Prepare the marinate by mixing all the ingredients from sl no 2 to 6. Then coat each prawns with this marinate and leave it for ½ hr.
Thread the prawns in Satay skewers from head to tail keeping the prawns straight.
Heat olive oil and butter in a pan. Arrange the skewers in the pan. Cook each side for 2 mins or till it changes colour and is tender. Do not over fry otherwise it will turn rubbery.
Serve hot. I paired these hot prawns with cold egg white salad with Greek yogurt.
