Frittata is a Spanish thick flat omelette, packed with flavours and could be consumed at any temperature. The Spanish classic recipe contains only three ingredients, Eggs, Potatoes and onion. However, many variations have come up along with its three key ingredients. Bell peppers, Cheese, olives and the spices, herbs of your choice. I have added another ingredients to make it a full meal. I have added bread slicesand lots and lots of cheese. It could be names stuffed pizza omelette. It could be cooked in flat based pan only or after half cook could be put in oven to make it crispier. I cooked it in flat pan.

- Eggs – 4
- Potatoes-3 thinly sliced/shredded
- Sliced Onion – 1 large
- Shredded bell peppers- 1/4th cup
- Minced Ginger- 1 tspnoptional
- Minced garlic- 1 tspn(optional)
- Bread slices- 2-3
- Crushed black pepper- 1 tspn
- Chili flakes- 1 tspn(optional)
- Cilantro/ parsley/Coriander leaves- 1 tblspn
- Olive oil- 3 tblspn
- Butter 2 tblspn
- Mozzarella /parmesan cheese- ½ cup grated.
- Salt to taste
Beat the eggs in a bowl with little salt and ginger. Keep aside.
Heat oil in pan. Put the potatoes and cook in medium flame till tender but not browned. Add onion and cook together till potatoes are softened and onions are translucent.
Add this mix in the beaten egg bowl and mix well.
In the same pan add butter. Pour the egg mix in the pan. Use spatula and gently spread the potato and onion mix evenly in the pan. Cook in medium flame.
Arrange the bread pieces over the mix when the surface is wet.
Add the grated cheese all over the omelet. Spread the bell peppers, chili flakes, black pepper one by one. Slowly you will see the breads get soaked in the wet egg mix. There are two ways to cook further.
- Cook covered in low flame till the top is cooked but not browned.
2.Place the pan in the oven and let it get browed in the oven.
I cooked it in pan. So to ensure that the inside omelette does not remain uncooked.
I flipped it by inverting in on a plate.
Slide it back into the pan to cook it evenly on both sides. While cooking shake the pan gently at times.
Serve hot with your favourite sauce. I love it with Green Chutney.
Top it with your choice ingredients.
