Bhetki Paturi- Fish with Mustard paste wrapped in Leaf & cooked in Steam.

 

IMG_20170519_144636IMG_20170519_144542Another Paturi  leaf wrap dish from Bengali kitchen. Either use Banana leaf or Bottle Gaurd leaf (Lau Shaak) to wrap. Both methods gives gr8 results. Only difference id , Lau shaak is edible and could be eaten along with fish. I am giving both methods.  This time it is Bhetki or Barramundi. This fish has no pin bones so are best considered for fry, kalia or Paturi. Behtki Paturi is popular dish during festivities like marriage parties or any celebrations. For my family, when Paturi is there in Lunch, it is celebration.

  1. Bhetki Fillet- 6-8
  2. Mustard(mix red & white in equal portion) – 2 tblspn
  3. Curd- 1 tblspn
  4. Turmeric Powder- 1 tspn
  5. Red chili powder- ½ tspn
  6. Whole Green chili- 10
  7. Mustard oil- ½ cup
  8. Salt to taste

Method:

Clean the fillets in running water and pat them with kitchen towel to completely dry.

Sprinkle half tspn salt & turmeric powder. Coat the fillets evenly.

Now make a paste of mustard, two green chili, pinch of salt and turmeric. This is the paturi dressing.In a flat based bowl, mix the balance turmeric, salt to taste, red chili powder to the mustard paste. Add mustard oil.  Make a thick paste.

Now add the fish fillets one by one and coat these with the mustard paste.

Take banana leaves. Wash it nicely under water and dry it with kitchen towel.

Hold these leaves one by one over the gas flame. Keep flipping so that the leaves get heat. This technique is important to make the leaves soft and easy to fold. Otherwise the leaves crack while folding.

Now brush oil in the center of each leaf.Place one fillet and keep one slitted green chili on top of each fillet.

Fold the leaf from all sides to make a packet. Tuck it from all sides with toothpick or tie with thick thread. If you have bigger size of leaves then you may put two fillets in a leaf.

If you do not have banana leaves you can use silver foil and make packets folded from all sides.  I have shown both ways in my post.

Now place these packets in steamer. Steam it for 20-25 mins. !st 5 mins in high heat. When the water in bottom pot starts boiling reduce the flame to medium. Switch off the gas and give it 10 mins standing time before it is served.

Open the leaf only when it is to be served. Best paired with steamed rice.

2nd option for making this dish without steamer:

Mocha paturi wrap 2

Pour 1 tblspn oil in a pan., and heat it. Arrange the packets in the pan and cook covered in the pan. It will be cooked with the heat and vapor generated inside the pan. After 10 mins flip the packets and cook for another 8-10 mins.
