Kale Chane ke Kabab(Black Gram Lentil Kebab)

Think of Kale Chane or Dark chickpea, 1st dish appears  in mind is Tari Wale Chane i.e. either  curried chickpea or Ram Navami wale sukhe chane.  Today I will give you a superlucious alternative dish out of this Kale Chane.

Few days back I had soaked dark chickpea for growing sprouts . It was raining and my husband  wanted to have something hot & spicy in dinner.  Instead of making regular meal I thought of making Kebabs out of the soaked chana (inspired by Chef Ajay Chopra).  This was my 1st trial and it came out so well. Delicious melt in mouth kebab, like any non vegetarian kebabs.

Black chickpeas have several nutritional value and since these kebabs are not deep fried, could be considered as healthy too. So sharing the recipe:

Ingredients for kebab:

  1. Boiled and softened Kale Chane /Black chickpea (Salted)- 1 cup
  2. Cottage Cheese- 1 cup
  3. Chopped Green Chili- 1 tspn
  4. Grated Ginger- 1 tspn
  5. Chopped Garlic – 1 tspn
  6. Chopped Coriander Leaves – 2 tblspn
  7. Chana masala powder -1 ½ tblspn (Refer recipe)
  8. Red Chili powder- ½ tspn (optional)
  9. Chopped onion – 2 tblspn
  10. Lemon juice – 1 tblspn
  11. Salt to taste
  12. Oil for shallow fry
  13. Mint leaves for garnishing

Ingredients for dip:

  1. Hung curd (Chilled)– ½ cup
  2. Fresh cream- 1 tspn
  3. Rock/black salt- ½ tspn (to taste)
  4. Red chili powder- 1/4th tspn
  5. Chopped mint leaves
  6. Black pepper powder- ½ tspn

Method Kebab:

Heat 1 tblspn oil in a pan. Add garlic and fry it till lightly browned.

Add chopped green chili. Fry it.

Add chopped onion. Fry it till lightly browned.

Add chana masala, ginger. Fry it nicely.

Add boiled chana. Mix it nicely with spices and fry it for 1-2 mins.

Add water and cook it so that spices are nicely mixed with chickpea. Cook till water dries up completely.

Cool it and grind it to make a dry dough out of it.

Transfer in a bowl.  Add lemon juice.

Add Cottage cheese. ( I prefer making the cottage cheese at home. So strain it in a mulmul cloth and press it to squeeze extra moisture from it.)

Add Chopped Coriander leaves.

Now use your fingers to mix the whole thing nicely and form a dough out of it.

Divide the dough in equal to form  balls . Approx  6-7.  Grease your palm and form patty out of each ball.

Put it in fridge at least for an hr.

Pour oil in a flat based pan. Heat it on high then simmer the flame before putting the kebabs for frying.

Shallow fry the kebabs in low or medium flame. Otherwise it will burn from outside and the inner portion will not get the grease.

Kebabs are ready to serve.

Method for Dip:

Mix all the ingredients with curd. Dip is ready.

Serve the delicious Hot kebabs with chilled dip. Super combination. Try it.
