Tahini

Tahini is a condiment made from sesame seeds.  Tahini is popular as a major component of Hummus , be it of any flavor. It is also a key ingredient of Baba Ganoush.  I have shared recipes of Hummus  which contains Tahini. So I thought of sharing this recipe separately also. Beside component of Hummus it is also used as a dip of its own as well as used in cuisines of eastern Mediterranean region.

It has excellent food value. Tahini made from sesame seeds is lower in fat than toasted sesame. It is an excellent source of calcium and healthy omega-3 and omega 6 fatty acids.

Ingredients:

  1. Sesame seeds ½ cup
  2. Garlic pods 2-3
  3. Kosher/sea salt ½ tspn
  4. Lemon juice 1 tblspn
  5. Olive oil(preferably extra vergin) 2 tblspn
  6. Cilantro & chopped green chili for garnishing

Method:

Put everything together in a blender.  Save 1 tblspn oil and garnishing ingredients.

Blend it till a  smooth paste is formed.

If it is too dry, add 1tblspn water.

Transfer in a bowl and garnish with chopped green chili and cilantro.

Store in a glass jar. Top it with balance olive oil. Keep in fridge for future use upto 15-20 days.

Note: It can be flavoured by adding rosemerry, parsley ,green chili and cilantro.
