Summer time is Melon time. Consume it in any form, just cut and eat, make a slush, Mojito, sangria or a Salad. Feta and Water melon is a classic combination. Here I have added mango balls to give it a tangy taste. and used the melon shell as serving bowl. Just dig in….
- Water melon scooped in round shape 1 cup(refrigerated )
- Mango scooped in roundels ½ cup(refrigerated)
- Pitted olives 4
- Feta cheese 1 tblspn or more
- Juice of orange or pomegranate 2 tblspn
- Honey 1 tspn
- Lemon juice 1 tblspn
- Black pepper 1 tspn
- Black salt ½ tspn
- Mint leaves 1 tblspn
For melon Bowl:
Cut water melon to half. Now scoop out roundels from the melon discarding the seeds till white base of melon is visible. When you find no more balls are possible, just scrape the red portion out and keep it in fridge. This can be used to prepare melon coolers or slush.
Now put the melon shell upside down and cut the edges in triangular shape.
Melon bowl is ready.
In a small bowl pour fruit juice, lemon juice, pepper, salt. Roll the mint sprig with your fingers to release the herb’s fragrance and mix in the liquid. Keep aside.
Take the melon bowl. Arrange the scooped melon and mango.
Slice the olives and spread crumbled feta over it. Now slowly spoon the dressing over it so that it reaches all ingredients.
Your Melon bowl salad is ready to dig in.
