  1. Baby Potatoes- 15/20
  2. Cumin seeds- ½ tspn
  3. Asafoetida – large pinch
  4. Coriander Powder- 1tspn
  5. Turmeric Powder- 1tspn divided 1 /2 & 1/2
  6. Tamarind Pulp(thick)- 2tbspn
  7. Red chili powder- 1tspn
  8. Green Chili slit – 3
  9. Ginger juliennes- 1tspn
  10. Chopped Coriander & Mint Leaves- 1/2 cup
  11. Oil preferably mustard- 4 tblspn.
  12. Chat Masala- 1tspn
  13. Salt to taste



Boil the potatoes with skin on but do not overdo. It should be soft but firm. Now press each potato between your palm to flatten it. Fry these potatoes in oil with salt & half the turmeric powder. Keep aside.

In the same oil crackle the cumin seeds & asafetida. Put Green chilies,  ginger,  cumin powder & turmeric powder one by one. Now put the fried potatoes and fold in the masala nicely . sprinkle the red chili powder, saute and pour the tamarind pulp, salt & cook it covered for 2 mts.. Cook uncovered till the extra moisture is dried.    in half of chopped coriander & mint leaves.

Transfer in Serving bowl & garnish with fresh greens chilis, coriander and mint leaves.  Sprinkle chaat masala.

Best with flat bread/roti/ puri/ paratha.
