Roasted Cauliflower (Whole)

  1. Medium sized cauliflower – 1
  2. Grated Onions – 1 cup
  3. Fresh Tomatoes (pureed) – 2
  4. Chopped green chilies to taste
  5. Ginger Paste – 1 tspn
  6. Cumin Powder – 1 tspn
  7. Coriander Powder – 2 tspn
  8. Turmeric Powder – 1 tspn
  9. Red Chili Powder – 1 tspn
  10. Garam Masala Powder – ½ tspn
  11. Oil – 2-3 tblspn
  12. Salt to taste


Wash the cauliflower in running water at least 2 hrs before cooking. Pat it dry to remove the moisture completely using a muslin cloth or a kitchen towel. Take salt and turmeric and use your hands to cover the cauliflower in them. Wrap it in cling foil and cook it in the microwave oven for 3 mins. Unwrap it and let it cool down.

In a hot pan, pour oil and add onions. Sauté till brown. Now add the dry masalas one by one except garam masala. Add pureed tomatoes & ginger paste and cook till the oil separates from the masala. Add green chilis & garam masala. Sprinkle a little water to help the masalas cook properly. Set aside to cool.

Now stuff this cooked masala inside the sections of the florets of the cauliflower. Create space in between florets using fingers (they should not break from main stem) and stuff the masala in the gaps and on top of the cauliflower.

Preheat the oven at 2500C. Place the cauliflower in a gill pan and grill at 1800C for 20-25 mins or till it is roasted properly. It can also be roasted in an air fryer for 7-10 mins, or in a microwave (convection mode) for 15-20 mins.

Serve hot with roti/parantha.
