  1. Dry pomegranate seeds (anardana) – 1 tblspn
  2. Coriander seeds – 3 tbspn
  3. Cumin seeds – 1 tbspn
  4. Black Cardamom seeds – 2 tspn
  5. Black pepper – 2tspn
  6. Cloves – ½ tspn
  7. Cinnamon – 2”-3” piece
  8. Whole Red Chilis – 7-8 (or ass per the preferred heat)
  9. Black salt – 1tspn
  10. Yellow Chili Powder – ½ tspn


Lightly dry roast all the above spices (the spices must not change colour or darken). Cool the mix and grind it coarsely and store it in glass jar for future use. It can also be used in rajma, lobia, dry bhindi or potato dishes.
